Crumpets are one of the great tea classics in Scotland. They are a kind of pancake, thick and soft at the same time, with thousands of holes at the top. The whole thing is usually toasted, buttered, then spread with jam or marmalade.

Soaked in tea, it is a pure delight. It must be said that these rather fluffy pancakes are as simple as they are tasty! A real comfort after a beautiful day spent exploring the Scottish territory! And it’s even better when eaten in the warmth of a rainstorm!

You can find them in most bakeries and tea rooms in Scotland. Very cheap to make, they will cost you almost nothing and will offer you a nice moment of Scottish conviviality!

Recipe: The crumpets

Ingredients

  • 225 g of flour
  • baking powder
  • 1/2 teaspoon of salt
  • 1 teaspoon sugar
  • 150 ml milk
  • 150 ml water at room temperature
  • 1/2 teaspoon baking soda
  • butter

Preparation

  • In a bowl, mix the yeast in the milk and water.
  • Stir then add the flour, salt, sugar, and baking soda.
  • Stir until the mixture is smooth.
  • Cover the bowl with a towel and let rise for 1h30.
  • Then heat a non-stick pan over low heat.
  • Melt some butter, then spread the dough in baking rings halfway up the pan.
  • Let cook as is for 10 minutes, then turn over for 3 minutes.
  • Once cooked, release the crumpets from the rings and serve on paper towels.
  • Serve with butter and marmalade!
